Named for Guatemalan’s national flower, this lovely coffee was produced by smallholder farmers near Lake Atitlán. Monja Blanca coffees are grown on the slopes of volcanoes surrounding the lake. The high elevation plus their proximity to the water allows for hot, dry days and cool nights which slows down cellular respiration and improves the development of sugars and acidity in the beans. The unique play of climate and soil makes for a cup characterized by pleasant, lingering sweetness balanced with a snap of red fruit acidity.
