A UNIQUE PROCESS:  Typical categories that refer to coffee processing (i.e., washed, semi-washed, natural, etc.) don't always neatly apply. In this case, Narvaez  innovates with an unconventional, multi-step fermentation process that includes a hot water 'shock' to wash the coffee, sealing in the sugars and amplifying it's unique flavor characteristics.
