A truly special coffee from Colombia - one of a kind and not to be on the menu for long. It just so happens that the tasting notes are beautifully coordinated with a nod to wintery delights. Aromas of juniper, candy cane and cola!
The sequential carbonic macerated processing from Edwin Noreña is intensive and results in an absolutely stunning and unique cup profile that has great clarity of flavor and a very “clean” finish.
How is it processed? While technically a washed coffee, this is not a typical process. Cherries are harvested and soaked in water for 4 hours to clean the exterior of the fruit, sort out floaters and hydrate the fruit.
The coffee fruit is then put into an anaerobic environment to undergo the initial carbonic macerated fermentation. The cherries are then removed from the tank and depulped. The mucilage-covered coffee is then submerged in water for final washed processing.
About the farm: Finca Campo Hermoso has been in Edwin’s family for over 30 years. After his father passed away, Edwin began developing the farm for unique specialty coffees. Edwin has become a prominent innovator for Colombian specialty coffees. In addition to overseeing his farm, he's is a Q Grader and processor (similar to being a wine sommelier, but for coffee) and Cup of Excellence judge.
